  1. In a medium-sized bowl, combine the mayonnaise and sour cream. Add half of the freshly chopped cilantro, the juice from half a lime, and half of the Parmesan cheese. Note: The other half of these ingredients will be used as garnish. 
  2. Next, stir in half of The Rebel Red Hot Sauce and the 1 teaspoon of The Bearded Butcher Hot seasoning.
  3. Mix all ingredients thoroughly until well combined and smooth. Your Mexican street corn sauce is now complete!

How to Roast the Corn:

  1. Prepare your heat source: If using an open fire, ensure you have a medium-low flame. If using a grill, preheat it to medium heat. The key is to avoid a high flame, which can burn the corn quickly.
  2. Roast the corn: Place the corn cobs directly over the medium-low flame or on the grill. Rotate the corn cobs every minute or so to ensure even cooking on all sides. You're looking for the kernels to turn a vibrant yellow with slight golden-brown char marks.
  3. Cook until tender and golden: This process should take no more than 10 minutes. The corn should be tender but still have a slight bite.
