Made the Jalapeno Cheddar snack sticks yesterday and was very pleased with the order, arrival, and packaging of this product. I used venison and pork butt 50/50. I added 3 oz encapsulated citric acid that was not included. I struggled with the casings and realized I needed a snack stick stuffing tube so I made them careless and they turned out great. Just the right amount of cheese and Jalapeno spice that they complimented one another. Slight but pleasing afterburn on the palate.
I decided to give this high end fat a try. I made two separate batches of deer burger. One with regular beef fat that I had saved and one batch with wagyu. The wagyu was so much easier to grind and the taste is outstanding in the venison. I will be making more deer burger using wagyu for sure. It’s worth the extra cost.
The Bearded butchers truly kept in mind the sole processors. I love all their kits, you can mix and match, ect. But whatever you chose, they provide step by step instructions from start to finish and everything is pre-measured!
This stuff makes jerky easy. All you have to do is cut your thin strips, marinate it in this overnight and then dehydrate it. It is very easy! Just be careful … The package says “ for up to 10 pounds.” I used 8 pounds and it was very salty. I soaked it in water and then dehydrated it again and it was fine, actually very good. Just make sure you use “at least” 10 pounds of strips unless you like it really salty!
This seasoning is a perfect blend of flavor and heat
Used two packages to make 50 lbs of sausage with no issues. Very little waste and had about 1/3 bag left over when I finished. Will definitely be ordering more.

Made some venison bacon using the maple and cure kit. Turned out amazing and will for sure buy again for deer season next year. Kids and wife love it and already have shared with friends.
