Have seems the videos from you guys. Tried the DYI snack stick. Kit was great everything labeled well. Casing did not have one blowout while stuffing. Render down perfect and some of the best flavor and sticks I have made to date. Will be buying more
I love crispy steak and pork fat. I render it crisp, salt it with Maldon finishing salt flakes, and eat it like popcorn. Yes - I am a Philistine, I know. The grain-fed prime beef fat trimmings and pork fat trimmings exceeded my expectations. Beautiful, clean, delicious. My steak and pork chop experience is now "chef's kiss".

First time using ECA, and it added a wonderful "tang" to the bologna! Great smoky flavor, especially after letting it rest in the fridge for a week or two. The rest really brought the flavors together. My new go to for ring bologna!!
