This is my first order with the Bearded Butchers, and also my first time using the edible collagen casing for my Italian sausage. Watched a video the Bearded butchers made comparing collagen casings to natural casings. So, I gave it a try and glad I did. What can I say, BB's high temp cheese's are the best. I think I've tried them all now, but this blue cheese is way up there on that list now. If you dare to mix in a sausage receipt, you won't be sorry. But if you want to step into the breach , try this in ground turkey and pork butt and BB spicy sweet and red-hot and you may just find your new buffalo wing sausage favorite.
Beautiful knife and works perfectly. I already had one of these for butchering my deer. I use it for everything in the house. I wanted another for my camper with the kydex sheath. I would highly recommend.
