This is my preferred breakfast sausage seasoning. The mild sage flavor is perfect. It doesn't have the sugar that the country seasoning has, so it doesn't get the crust as readily when you're making patties, but the flavor is just right. It could use just a little more salt for my taste. I use this when making breakfast sausage to eat on its own. I use it with a 50/50 venison pork blend, 80/20 fat ratio.
We tried the sage because the country style seasoning was out of stock. It is good and has a mild taste of sage. We prefer the country style seasoning over the sage when using 50% pork and 50% venison. In my opinion, after making 25 lb of the sage and 25 lb of the country style seasoning sausages, we believe the country style seasoning has a stronger flavor profile for seasoning venison. We plan to use the country style seasoning and when we are in the mood we will just add a little bit of sage which we have done in the past also. Final thoughts. Both are very good.

I finally got the courage to use my grinder and bought the sage seasoning, added 50% deer and 50% pork shoulder and it was off the hook delicious and the best wild game sausage that I have ever eaten. Their ratio to lbs of meat was spot on. Since then I bought the country, Italian & chorizo seasoning and all of them are delicious!
Perfect with just ground venison as a breakfast sausage, no additional fats needed. Sometimes I add a bit more sage to it but highly recommend it.

Sausage seasoning and rub is outstanding
The seasoning has good flavor. I think it is portioned correctly for 25lbs. Did not give 5 stars because I could barely taste the sage. Next time I will add sage, cayenne, and crushed red pepper. That will make it perfect for me.
