17mm Mahogany Collagen Casing 4 Pack
The 17mm Bearded Butchers mahogany collagen casings are a great size of casing for making meat sticks. Edible and tender, yet still durable, these casings can be used as a replacement for natural casings and can be cooked shortly. Intended to be hung in a smokehouse, these casings can also be laid on screen in barrel style smokers (like pellet grills).
Each package contains 4 casings. 4 casings fully stuffed should hold about 25 pounds of meat.
Compared to traditional natural casings, collagen is easy to use and does not require soaking.
Keep sealed and under refrigeration when not in use. Avoid direct sunlight and extreme temperatures. Casings are READY TO USE immediately out of the packaging.
Maximum Stuffing Horn Size: 3/8" or 10mm
- Load casing onto stuffing horn
- Extrude meat into casing
- Cook in smokehouse
- Cut to desired length
- Once cooked and chilled down, vacuum seal and store fresh or frozen for best shelf life
Yall need to tell people that the 17mm casings require a 10 mm stuffing tube.
The 17 mm casings worked well over the 10mm stuffing horn, only one blow out due to me just getting use to my 30 lbs stuffing machine.
Easy to stuff, with minimal blowouts for a couple of first timers. Nice snap after smoking. The only casings we will be using for sticks!
This casing worked great we made a batch and added cheddar cheese to it. Had zero blow outs, held up great during smoking. The casing isn't noticeable during eating, it is very tender.
These were the best I have purchased yet. I just started making beef sticks and I couldn't find any that allowed you to eat the casing. The others I have purchased, the meat just pulled out of the casing. These are Awesome!
