This skillet combines crispy potatoes, savory sausage & bacon, peppers, and melty cheese for a satisfying morning meal. Plus, the smoky Chipotle Seasoning adds a touch of Southwestern twist that will satisfy your cravings!
Ingredients:
- 3-4 large potatoes
- 4 large eggs
- 1/3 to 1/2 lb ground breakfast sausage
- 2-4 slices of bacon
- 1-2 tablespoons olive oil
- 2-4 small sweet peppers
- 1/3 cup shredded cheddar cheese
- 1 small onion diced (optional)
- Bearded Butcher Blend Chipotle Seasoning
Instructions:
- Place large cast iron pan in the grill or oven and preheat to 400°F.
- Cut potatoes into ½ inch cube size pieces and toss in a bowl with olive oil to coat. Season potatoes to taste with Bearded Butcher Blend Chipotle Seasoning.
- Once the pan is up to temp, cook the bacon to taste, chop it up, and set aside.
- Remove most of the bacon grease from the pan but leave about a tablespoon to help cook the potatoes and add flavor. Toss your potatoes in the pan and cook until they are golden brown. (Stir every 5 -10 minutes to cook evenly).
- While potatoes are cooking, brown the ground breakfast sausage, and set aside.
- Deseed and dice the sweet pepper.
- When potatoes are almost done, stir in bacon, sausage, sweet peppers, and onion.
- Make 4 wells to cook the eggs. Crack eggs into the wells.
- Continue cooking until the egg whites are set but the yolks are still runny (over easy is recommended). Sprinkle the entire dish with additional Bearded Butcher Blend Chipotle Seasoning for an extra smoky kick.
- Top the dish with the cheddar cheese.
- Continue to cook until the cheese is melted and bubbly.
- Let the dish cool for a few minutes to allow the flavors to meld. Then, drizzle with Bearded Butcher Rebel Red Sauce for a burst of smoky heat. Dig in and savor the perfect blend of savory, cheesy, and spicy!
