This Reuben Skillet Dip takes all the classic flavors of a traditional Reuben sandwich and transforms them into a warm, creamy, crowd-pleasing appetizer that’s perfect for St. Paddy’s Day. It’s rich, cheesy, and incredibly easy to make, coming together in just minutes. What truly sets this dip apart is the homemade Russian dressing seasoned with The Bearded Butcher Original Blend, giving it bold, unforgettable flavor. Using ready-to-eat corned beef makes this recipe even more convenient, and leftover corned beef brisket works perfectly as well.

Ingredients for the Reuben Skillet Dip:

Ingredients for the Homemade Russian Dressing:

  • Rebel Red Hot Sauce (to taste)
  • 1 tsp Worcestershire Sauce
  • 1/2 tsp of The Bearded Butcher Original Seasoning Blend
  • 1/4 tsp Sweet Paprika
  • 1/2 Tbsp Dill Pickles, finely Chopped
  • 1 Clove Garlic, Mashed
  • 1 tsp Grainy Mustard

Garnish:

Serve on the Side-

  • Rye Chips
  • Toasted Party Rye Bread
  • Pretzels
  • Cornichon Pickles
  • Grainy Mustard
  • Fresh Parsley

Instructions on How to Assemble the Reuben Skillet Dip:

  1. Prepare the Ingredients: Begin by small dicing your precooked corned beef and setting it aside. In a large mixing bowl, combine the softened cream cheese and sour cream, stirring until completely smooth and creamy.
  2. Combine Ingredients: Add the shredded Swiss cheese, well-drained sauerkraut, diced corned beef, and 6 ounces of the homemade Russian dressing. Lightly season with The Bearded Butcher Original Blend to taste, then mix everything together until fully incorporated.
  3. Prepare the Skillet: Butter an 8–10 inch skillet and spread the mixture evenly into the pan, smoothing out the top. Place the skillet into a preheated 350°F oven and bake for about 25 minutes, or until the dip is heated through and warm all the way to the center.
  4. To Serve: Serve hot with rye bread chips, flat pretzels, or slices of rye bread for dipping. For an extra touch, serve with pickle chips, grainy mustard, and cornichon pickles on the side. This savory, cheesy Reuben Skillet Dip is guaranteed to leave everyone craving more!

Instructions on How to Make the Homemade Russian Dressing:

  1. Prepare the Ingredients: Grate the onion to a paste. Then, finely chop the dill pickles and mash the garlic clove.
  2. Make the Homemade Mayonnaise: In a Bowl, combine the egg and oil. Use an emulsion blender to blend until the mixture thickens into mayonnaise.
  3. Add the Rest of the Ingredients: Add the grated onion, ketchup, horseradish, Rebel Red Hot Sauce, Worcestershire sauce, The Bearded Butcher Original Seasoning Blend, sweet paprika, chopped pickles, and mashed garlic. Blend everything together with the emulsion blender until smooth.
  4. Taste and Adjust: Taste the dressing and adjust the seasoning (e.g., more Rebel Red Sauce or horseradish) as desired.

Warm, melty, and full of bold flavor, this Reuben Skillet Dip is guaranteed to be the first dish emptied at the table. The combination of savory corned beef, sauerkraut, melty cheese, and that homemade Russian dressing creates the perfect balance in every bite. Whether you serve it with rye chips, pretzels, or crackers, this simple yet flavorful dip will have everyone coming back for more.
