Cooking the apple crisp on the smoker adds a subtle, rich smoky flavor that simply can't be replicated in the oven. Combine that with tender cinnamon-spiced apples and a buttery, crunchy streusel topping, and you've got the ultimate cozy fall dessert.
Top it with toasted pecans, a scoop of vanilla ice cream, and a drizzle of caramel sauce for the perfect finishing touch.

Ingredients
Apple Filling
- 6–8 tart apples, peeled, cored, and sliced
- 2 teaspoons vanilla extract
- ½ cup brown sugar
- 3 tablespoons cornstarch
- ¼ cup Bearded Butchers Cinnamon Swirl Blend
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- ½ teaspoon salt
- 2 tablespoons butter
Crisp Topping
- ¾ cup all-purpose flour
- ¾ cup old-fashioned oats
- ⅔ cup brown sugar
- 2 teaspoons Bearded Butchers Cinnamon Swirl Blend
- ¼ teaspoon salt
- ½ cup softened butter or tallow
Optional Toppings
- Vanilla ice cream
- Toasted pecans
- Caramel syrup

Instructions
1. Prepare the Apples
Preheat your smoker to 350°F.
Peel, core, and dice the apples. Place them in a large bowl and add the brown sugar, cornstarch, Bearded Butchers Cinnamon Swirl Blend, lemon zest, lemon juice, vanilla, and salt. Toss until the apples are evenly coated and everything is well combined.
Transfer the apple mixture to a greased cast-iron skillet or baking dish. Dot the top with 2 tablespoons of butter.
2. Make the Crisp Topping
In a separate bowl, combine the flour, oats, brown sugar, Bearded Butchers Cinnamon Swirl Blend, and salt.
Add the softened butter or tallow and use your hands or a pastry cutter to work it into the dry ingredients until a crumbly streusel forms.
Evenly sprinkle the crisp topping over the apples.
3. Smoke the Apple Crisp
Place the baking dish on the preheated 350°F smoker.
Smoke for approximately 1 hour, or until the apples are tender and the topping is golden brown and crispy.
Depending on your smoker, you may need to rotate the pan halfway through cooking to ensure even browning.
4. Let It Rest
Once the apple crisp is finished, remove it from the smoker and allow it to rest for approximately 15 minutes. This gives the filling time to set while keeping the topping crisp and delicious.
5. Add the Toppings
Serve warm with your favorite toppings. We recommend a scoop of vanilla ice cream, toasted pecans, and a generous drizzle of caramel syrup.

Tips for the Best Smoked Apple Crisp
Choose tart apples. Tart apples provide the perfect balance to the sweetness of the brown sugar and crisp topping.
Don't skip the rest. Letting the crisp sit for 15 minutes after smoking allows the filling to thicken and makes it easier to serve.
Watch the topping. Smoker temperatures can vary, so keep an eye on the crisp toward the end of cooking. If the topping is browning too quickly, loosely cover it with foil.
Make it extra special. Serve it warm with vanilla ice cream, toasted pecans, and caramel syrup for the ultimate fall dessert.
