



















Old Fashioned Ring Bologna DIY Kit
Old Fashioned Ring Bologna (Trail Bologna tied in a ring to cook) is flavored with Salt, Pepper, Garlic and whichever meat you choose to use! This easy bundle takes the guesswork out of making a classic meat snack.
We make these with beef and venison but it's also great for elk or bison with pork trim or fat mixed in too! Aim for fat content totaling around 20% by weight.
Also great with our high temp cheeses mixed in!
This Kit Includes:
- 1 pack of Salt and Pepper Seasoning (9oz to season 25 lbs of meat)
- 1 pack of Pre-tied Ring Bologna Collagen Casing - 40mm x 18" - 25 pieces
- 1 pack of Encapsulated Citric Acid 60% (3oz for 25 lbs of meat)
- 1 pack of Dried Minced Garlic (2oz)
- 1 pack of Hickory Smoke Flavor Powder
- 1 pack of Sodium Nitrite Pink Curing Salt 6.25% 1oz for 25 lbs of meat (This product contains sodium nitrite with a concentration of less than 10%).
Made 50 pounds of old fashioned bologna out of mule deer (40 lbs deer, 10 lbs pork fat)

I have made 150lbs of this ring bologna recipe. It is a perfect blend of spices. Typically with these kits I need to add seasoning to make them more flavorful. This kit requires no doctoring at all. My friends and relatives all rave about this mix. It will be a staple in my processing for years to come.
Turned out amazing! Wife and kids love it, good consistency and texture with the venison and pork mixture. I also added high temp cheddar I had laying around.
This was a great kit, the flavor is excellent. I ground the meat 3 times and it had a good consistency not crumbly but not completely smooth it was a 50/50 mix deer/pork shoulder
I've bought bacon, ring bologna and smoked kielbasa DIY kits. Best products I've ever used I highly recommend buying from bearded butchers.
