Excellent Sausage! My wife loved it too and with the lean venison to fat ratio (10%) they are still hold moisture. I did 50% cased and 50% uncased for various recipes

So it was my first time making venison sausage. The blend of herbs and spices were right on the money! The casings were top notch as well. Was nervous making it since I’ve been eating sausage my whole life. We Italians take it personally if something isn’t quite right. Haha. Ordering another kit and making more.
