I bought this along with all of your knives and I am enjoying the hell out of them.
I've gone through several beef and I love the edge I can maintain with the polished steel over a more abrasive one.
I'm still 'honing' my skills with creating an edge that will last through more than one beef with the stones but I'm getting lots of practice and with this steel it really saves me.

This is the first time I've used a polished honing steel. There is always a micro Burr on one side of the knife edge after using a serrated honing steel or a sharpening stone. The polished honing steel doesn't remove the burr, instead, it trues the micro burr towards the apex of the edge. Since the micro burr is actually shaped like a microscopic saw blade with razor sharp points, the points become aligned dead center of the cutting edge. Only 3 of 4 light swipes on either side of the blade are required to do the job as the points get misaligned on the cutting board or bone deflection. Since the honing steel's surface is polished hardened steel, there are no metal shards from your blade or the honing steel. My knives cut through meat, gristle, fat, sinew, silver skin like butter. The polished steel is a lot less harsh on my blade and helps keep my edge straight without shaving any metal off
- I believe a polished hone is smarter on the stone-polished and lesther-stropped blades that I sharpen, rather than using the grooved blades which are more likely to chips or filings.
- The rubber handle/guard is also better than most hones, because if you're honing back toward the handle and hit a metal guard you might blunt your blade, but the rubber tip won't. Probably shouldn't hone back toward the handle anyway, but we tend to slap that blade around kinda stupid sometimes don't we.

I am not sure if I like this one. I don't know much about honing steels as I am fairly new to the whole processing my own game and therefore making sure that my knives are nice and sharp. I had a knife I was using and felt like it was getting a bit dull so I used a hand sharpener and then used this honing steel and didn't feel like it worked well. But again as a disclosure I am new using these products and may just need a bit more practice and direction. So I will keep using for now.
Loved the steel. I always knew there was a better steel out there that I’d seen the people use that butchered our hogs every year. They had sharp knives and a smooth steel the really cut. This is that steel. I could not find one like this anywhere. Thank you.
