This is a fantastic piece of cutlery to team up with its little brotherthe Victorinox 7 inch flexible boning knife. Ultra sharp from the manufacturer. Dishwasher safe handle. Simple to keep sharp with a few passes on the German made honing steel (also purchased from BB). The 10 inch slicer performed flawlessly making thin consistent cuts to a brisket I cooked recently for a party. Well worth the price.
The 10" breaking knife is the best large blade knife I have. It holds a great edge and there isn't anything I cut that is too big for it to handle. The fibrox handle really helps me keep a good, bloody grip while cutting the hind quarters of my deer into steaks. I am extremely happy with this knife.

I work part time as a meat cutter and I absolutely love this knife, it slices though the thickest cut whether it be ribeye or strip as if it was butter. I sharpen it maybe once a shift and the blade last the whole shift. Great quality, I have the 8" breaking and the 6" bone knife, I love the whole collection.
