32mm Clear Smoked Sausage Casing 2 Pack
The 32mm Bearded Butchers clear smoked casings are a great size of casing for making smoked sausages, bratwurst, or any other dinner or sandwich sized sausage. Edible and tender, yet still durable, these casings can be used as a replacement for natural casings and should be cooked shortly after stuffing. These casings are made specifically for hanging sausages and bratwurst over sticks in a smokehouse and will not break if handled properly.
Each package contains 2 casings. 2 casings fully stuffed should hold about 25 pounds of meat.
Compared to traditional natural casings, collagen is easy to use and does not require soaking.
Keep sealed and under refrigeration when not in use. If casings become brittle, soak briefly prior to use.
- Load casing onto stuffing horn
- Extrude meat into casing
- When twisting into links, make first twist in one direction and then next twist in opposite direction to prevent unraveling, being careful to not over twist links (maximum two full twists) - if you are twisting be careful to not overstuff the casing or it will be too tight to twist and might break
- Place in smoker
- Once cooked and chilled down, vacuum seal and store fresh or frozen for best shelf life
