First off, I feel bad for all my other butchering knives. I purchased the 6" boning knife in early September since I was tired of cutting up my animals with the replacement razor blades. Since purchasing the knife, I have only used this boning knife to cut up 2 elk, and one deer. The weight and grip of the knife is exceptional, and the handle is exactly what I want when applying force to either small or large pieces of meat. I didn't think the weight and design would stand out to me as well as it does. My biggest qualm with butchering my own animals is that my other kitchen knives or replacement blade knives always dull to fast, but not this one. On a deer I can whip through two hind quarters without noticing that it needs a tune. You won't regret purchasing this knife for any needs you may have. Happy slicing!
I have seen ads for very expensive knives on some of the cooking channels. The Bearded Butchers actually use the 6, 8, and 10 inch Victorinox knives and get great results. So I purchased all three at moderate prices, and they do a great job. All other knives I have do a poor job of shaving fat and silver skin. Very happy with my purchase.
