Chefs note: 

Before starting this recipe, allow the cream cheese to come to room temperature—this makes mixing much easier and ensures a smooth, creamy dip. For best results, shred your own cheddar cheese if using; freshly shredded cheese melts far better than pre-shredded varieties.

Ingredients: 

 

Garnish: 

  • Cooked Chopped Bacon
  • Finely Sliced Scallion
  • Blue Cheese Crumbles
  • Red Hot Sauce, Drizzled

Instructions: 

Smoke the Chicken- 

  1. Place one pound of raw chicken breast into a bowl. Add a small amount of Bacon-Up bacon grease, then season with The Bearded Butcher Hot Blend. Mix well to evenly coat the chicken.
  2. Preheat the smoker to 300°F. Place the chicken breasts directly onto the smoker then cook until they reach an internal temperature of 160°F, about 45 minutes. Flip the chicken every 15 minutes to ensure even cooking. Be careful not to overcook - the chicken will continue cooking once the dip is composed and heated. 
  3. Remove the chicken from the smoker and allow it to rest undisturbed for 10 minutes, then shred. 

Prepare the Dip- 

  1. In a mixing bowl, mix one pound of room-temperature cream cheese until smooth.
  2. Add flavor

Mix in: 

Stir until everything is fully combined. 

Smoke the Dip-

  1. Transfer the dip to a greased skillet and place it onto the smoker at 350°F. Drizzle additional hot sauce over the top if desired. Smoke until the dip is hot and bubbly throughout. 
  2. Remove from the smoker and garnish as desired. The Butchers recommend chopped cooked bacon, a sprinkle of the Hot Blend, fresh sliced scallions, and blue cheese crumbles.
