Ingredients:
- Sour Cream, 1/2 Cup
- Mayonnaise, 1/2 Cup
- Freshly Squeezed Lime Juice, 1/2 of a Lime
- Freshly chopped Cilantro, 2 Tbsp
- The Bearded Butcher Zesty Lime Blend, 1/2 Tbsp
- Roasted Corn off the cob, 4 Cobs
- Parmesan Cheese, 1/4 Cup
Garnish:
- Tortilla Chips
- Fresh Jalapeno Coins
- The Bearded Butcher Rebel Red Hot BBQ Sauce
- Reserved Freshly Chopped Cilantro
- Reserved Grated Parmesan Cheese
How to Roast the Corn:
- Prepare your heat source: If using an open fire, ensure you have a medium-low flame. If using a grill, preheat it to medium heat. The key is to avoid a high flame, which can burn the corn quickly.
- Roast the corn: Place the corn cobs directly over the medium-low flame or on the grill. Rotate the corn cobs every minute or so to ensure even cooking on all sides. You're looking for the kernels to turn a vibrant yellow with slight golden-brown char marks.
- Cook until tender and golden: This process should take no more than 10 minutes. The corn should be tender but still have a slight bite.
