The 2.5 inch Bearded Butchers Branded fibrous mahogany casings are a great size of casing for making summer sausage.
Each CASE has 12 packs, with each pack containing 10 casings. There will be 120 casings in total, and all fully stuffed should hold about 300-350 pounds of meat.
Keep sealed and dry when not in use.
Instructions:
- Load casing onto stuffing horn
- Extrude meat into casing
- Tie casing shut (includes twist tie)

Used these casings the last few years for deer sausage. They allow great smoke into the meat and I haven’t had any split while maintaining 215 degrees or less. Anyone that knows Bearded Butchers in the cooking world always smile as soon as they see the logo when I pull a log out of the fridge to cut up for a gathering!!
