I tried 1/2 recipe's of both Bearded Butcher Cajun Flavor Snack Sticks and Bearded Butcher Original Flavor Snack Sticks for the first time. I followed the recipes using venison and pork fat. I used HT Cheddar with Original and HT Pepper Jack with the Cajun sticks. Aside from the venison and pork, all products came from Bearded Butchers DIY kits. The directions were straight forward and easy to follow. The results were fantastic! The Cajun recipe has a mild kick to it that's very appealing to me but a 'little' spicy for 'some' family members. In future batches I'll omit the cheeses as I didn't think it added enough enhancement to the taste but the cheese gave my carnivore friends something to question when they looked at it. Additionally, my wife might be able to crank the stuffer easier without the cheese chunks passing through the small feed tube. All my family and friends that have tried them have all reached back into the bag for 2nds, 3rds and more; so, the recipes are real hit with everyone I've shared with. I will most certainly repeat the purchases. I'm anxiously awaiting deer season to try the summer sausage kit i also purchased!

This was my very first time making snack sticks. I was very nervous doing this for the first time as I didn't want to screw up 25lbs of meat. I used 20lbs of beef mixed with 5lbs of pork. I had a friend help with everything as we split the meat sticks.
Grinding and mixing of the meat and spices went well. We couldn't believe how good the spice mix smelt! We were excited. Filling the casings took some getting used to in order to get the correct amount in the casings. (remember this is the first time doing this)
We used competition blend pellets in the smoker. The smoke sticks came out perfect! Pulled at IT 160 degrees and put into a ice bath for 5 minutes then air cooled and cut into 6 inch sticks. Refrigerated overnight and packaged with a vacuum sealer.
Both of us love the flavor and outcome. These won't last long!
Very simple to make in the end and the kit simplifies everything so there is no guesswork. The kit price is also on point!
