Deer sausage was very good , a little on the mild side, would have liked a little more sage for a more robust flavor profile. I will still purchase and use again but I will add additional sage.

This was my first time using the DIY kit. I used approximately 8 pounds of axis meat and 2 pounds brisket fat trimmings, so I used a little less than half the season packet. The pack contained three tubes of collagen and I only used one for all 10 pounds of the meat. I was very satisfied with the consistency of the collagen casing and the overall taste of the breakfast sausage. I will definitely be using this again.
We thought the mix was veru good on the sage, but a bit saltier than we are used to, not in a bad way, just different. Made 5 lbs this time, and will probably add a little coriander and fennel to the mix next time. Great base to start experimenting with flavor profiles.
I only have room for 1lb batches so that is what I made, also added a touch of the Hickory smoke it all worked great. These were the most tender and flavorful breakfast sausages using venison that I have tried. I skipped the casings, rolled the sausage into a log shape in plastic wrap, popped the log in the freezer for an hour and cut in useable slices. Froze them in vacuum seal bags and have a nice supply now. Had a few friends try them so now I guess I'll be making more after their positive comments!

Only comment would be I think 25# is too much meat for the amount of seasoning, I’d do 15 next time for same volume
The seasoning is good but it's pretty mild. I was expecting more salt, pepper, and sage seasoning flavor in the finished product but it was quite mild. Not bad at all, but I wouldn't do it again. Kids even thought it needed more so I added jalapeno flakes.
