Ingredients:
- 6 lb chuck roast
- 2 lbs of red potatoes, cut to bite size
- 1 onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 1 32 oz bone broth
- 2 tablespoons Bearded Butcher Blend Black Seasoning
- 2 tablespoons Bearded Butcher Blend Original Seasoning
- Aluminum pan
- Aluminum foil
Instructions:
- Preheat your smoker grill to 180 Degrees Fahrenheit.
- Combine the Bearded Butcher Black Seasoning and Original Seasoning in a small bowl. Generously sprinkle the seasoning over the chuck roast, ensuring even coverage.
- Once the grill is preheated, place the roast in the smoker grill and cook for 1.5 hours.
- Remove the Roast from the grill, and place the chuck roast in an aluminum pan. Arrange the potatoes, onions, celery, and carrots around the roast. Pour the bone brother over everything, ensuring the vegetables are submerged.
- Lightly dust the roast and vegetables with Bearded Butcher Original Seasoning.
- Cover the aluminum pan tightly with aluminum foil.
- Transfer the aluminum pan to the smoker grill for 4 hours at 275 Degrees Fahrenheit.
- Once the cooking time is complete, remove the aluminum pan from the grill and let the pot roast rest for around 15-30 minutes before carving.
Tips:
- For a richer flavor, use homemade bone broth instead of store-bought.
- If you don't have a smoker grill, you can use an oven or slow cooker to cook the pot roast.
