Heat a skillet over medium-high heat with a little beef tallow and sear the beef shank on all sides until a rich brown crust forms.
  2. Remove the shank temporarily and add two thinly sliced sweet onions to the skillet. Sauté them for about 10 minutes until softened and lightly golden. Add the chopped garlic, bay leaves, and thyme, allowing them to become fragrant.
  3. Deglaze the skillet with a ½ cup of red wine, scraping up any browned bits from the bottom. Move this into a larger pot or Dutch oven.

  1. While the beef braises, thinly slice the remaining two sweet onions and cook them low and slow in 2 tablespoons of butter. Allow them to caramelize gently for about 2 hours over low heat, stirring occasionally, until deeply golden and sweet - this step is absolutely worth the time.
