- 1 lb. Ribeye Steak (cut into 2-3" cubes)
- 2 tablespoons Bearded Butcher Cajun Seasoning
- 1 tablespoon Neutral Oil (high smoke point)
- 1/2 cup Butter
- 1 tablespoon Garlic (minced)
- 1/2 cup Heavy Cream, optional
- 1/4 cup Green Onion (finely sliced)
- 1 Shallot
- 1/2 teaspoon Red Pepper Flakes
- 1/2 cup + 2 tablespoons Parmesan Cheese (grated)
- 1/2 teaspoon Thyme (chopped)
- 2 teaspoons Parsley (chopped fresh or dried)
- 1/4 teaspoon Smoked Paprika
- Pinch of Cayenne Pepper
- 1 teaspoon Dijon Mustard

- 2 medium onions (julienne cut)
- 1 tablespoon Worcestershire Sauce
- 2 oz Beef Stock
- 1 tablespoon wine or vinegar (for deglazing)

Instructions:
For the Cajun Butter Ribeye Steak Bites:
- Cube the Ribeye Steak into 2-3 inch pieces and season each cube generously with Bearded Butcher Cajun Seasoning.
- Heat a large pan over medium-high heat and add neutral oil to coat the bottom.
- Sear the steak bites in batches, cooking each side for about 3-4 minutes until golden brown. Remove from the pan and set aside to rest.
- Melt 4 oz of butter in the same pan over medium heat.
- Add garlic, shallots, and green onions to the pan, sautéing for 1-2 minutes until fragrant.
- Season the sauce with Cajun Seasoning, smoked paprika, cayenne pepper, thyme, Dijon mustard, and lemon zest/juice. Cook for another minute.
