Inspired by the iconic movie "The Great Outdoors," the Giant Caveman Style Steak, also known as The Old '96er, is the largest steak you can cut from a beef. This behemoth of a steak is a game-changer for any meat enthusiast.

What is a Caveman Steak?

A Caveman Steak is a massive, thick cut that encompasses the entire round of a beef. It includes the Sirloin Tip, Top Round, Bottom Round, Eye of Round, and part of the Tri-Tip. This colossal cut is the absolute biggest steak you can get from a cow, making it a true showstopper.

Our First Caveman Steak Experience

The first Caveman Steak we ever cut at Whitefeather Meats was from a Grain Fed Beef, and it weighed an astonishing 12.2 lbs! That's no '96er, that's a whopping '195.2er! This massive steak set the bar high for our future Caveman Steak endeavors.

How to Cut a Caveman Style Steak

Cutting a Caveman Steak requires precision and skill. Here's a step-by-step guide:

  1. Remove the rose meat from the beef carcass, then remove the flank steak using our trusted Victorinox 10" Breaking Knife.
  2. Make a cut all the way across the whole round, targeting the ball joint.
  3. Use a handsaw to cut through the ball joint.
  4. Remove the whole sirloin portion, leaving you with the whole round portion.
  5. Remove the whole hind shank and H-Bone.
  6. Cut the rolled rump section off the round with a bandsaw.
  7. Cut your Caveman Style Steak to your desired thickness.

Cooking a Caveman Steak

When it comes to cooking a Caveman Steak, there's no better way than using our Bearded Butcher Bold Blend Seasoning. We used a whole 6oz seasoning shaker to season a 12.2lb Caveman Steak!

Firing Up the Flavor

To cook the Caveman Steak, we fired up our Big Green Egg charcoal grill to 400°F and seared it to perfection. It took about 30 minutes to reach an internal temperature in the mid-120s. After letting it rest, we dug in and were blown away by the flavor and tenderness.

Conclusion

A Caveman Steak is an absolute monster of a steak, and when cooked over the flames of a charcoal grill, it's truly delicious.
