Smoked Chipotle Chili Recipe

Smoked Chili is a delicious and hearty dish that is ideal for a cool day. The smoky flavor of the meat and vegetables adds a unique depth of flavor to the chili, and the slow cooking process allows the flavors to melt together perfectly.

Cool & Smoky, The Bearded Butcher's Chipotle Blend is made with smoked chipotle peppers creating a mild bite and powerful impact. This recipe for smoked chili is easy to follow and produces amazing results. 

Ingredients:

  • 2.5 lbs of ground beef *or meat of your choice*
  • 2 tablespoons minced garlic
  • 1/2 chopped onion
  • 1-2 bell peppers, chopped
  • 1-2 ribs of celery, chopped
  • Bearded Butcher Blend Chipotle Seasoning
  • Chili powder
  • 1 (64 oz) can tomato juice
  • 2 10 oz cans of Rotel (diced tomatoes with green chilies)
  • 2 15 oz cans of kidney beans, drained and rinsed
  • 2 15 oz cans of corn (drained)
  • 1 15 oz can of petite diced tomatoes

Instructions:

  1. Preheat the smoker to 225 degrees Fahrenheit.
  2. While the smoker is preheating, add the tomato juice, Rotel, kidney beans, corn, chopped bell peppers, chopped celery, and petite diced tomatoes to the Dutch oven. Then sprinkle Bearded Butcher Chipotle Seasoning over the surface of the ingredients.
  3. Place the Dutch Oven into the smoker.
  4. On a large plate, combine the ground beef, garlic, and chopped onion.
  5. Form the ground beef mixture into a large patty, about 12 inches in diameter and 1/2 inch thick.
  6. Season the patty with a coating of Bearded Butcher Chipotle Seasoning, and sprinkle chili powder sparingly.
  7. Place the patty on a wire rack and place the wire rack directly over the dutch oven.
  8. Once the dutch oven and burger patty are in the smoker, cook for 4-5 hours, or until the internal temperature of the patty reaches 160 degrees Fahrenheit.
  9. Once the patty is cooked, remove it from the smoker and let it rest for 5 minutes before slicing.
  10. Crumble the patty to the chili and stir to combine.
  11. Serve the chili hot with your favorite toppings.

Tips:

  • *When smoking meats other than beef, keep in mind that leaner meats may require a shorter cooking time*.
  • Stir the chilli every now and then to prevent the ingredients from sticking to the bottom of the dutch oven.
  • When forming the beef into a patty, make sure it isn't too thick because that will extend the cook time. With more surface area, the burger gets a nice smoky flavor.
  • To add more spice to the chili, add some jalapeño peppers, seeded and minced, a few dashes of cayenne pepper, or some Bearded Butcher Hot Seasoning.
  • Handle dutch oven carefully, it gets very hot. Wear heat resistant grill gloves to ensure safety.
  • To measure the temperature of the beef, use a digital meat thermometer.
  • Serve the chili with your favorite toppings, such as shredded cheese, sour cream, avocado, chopped cilantro, or jalapeños.
